Benefits:
Stainless steel is highly resistive to wet environments, most
chemicals and is an FDA approved surface. The latter being
the largest benefit. They are generally designed for easy
wash down and are commonly put in food, or other FDA regulated,
processing plants.
Drawbacks:
MONEY; stainless steel is very expensive, very expensive!
Stainless steel mezzanines are restricted to smaller column
spans, generally 10' - 20' max.
